Fall is finally here and what better way to kick it off than with a super yummy and easy pumpkin recipe! This pumpkin bread is great to enjoy with a cup of coffee or tea, anytime of the day! You can use any type of flour or oil to make this bread. You could also omit the chocolate chips if you prefer!

Ingredients:

2 eggs 

1 1/2 cups of whole wheat flour (or choice of flour)

1/3 cup of olive oil (or choice of oil) 

1/2 cup of honey 

1 cup of pumpkin puree 

1 tsp of vanilla 

1 tsp of baking soda

1/2 tsp of baking powder 

Pinch of salt 

1/2 cup of chocolate chips 

Directions:

  • Preheat oven to 350°F and spray the baking dish with non-stick spray
  • In bowl, whisk together the eggs, oil, and honey
  • Add in the pumpkin puree and vanilla into the bowl
  • In another bowl, mix together the flour, baking soda, baking powder, and salt 
  • Combine both of the mixtures, add chocolate chips, and stir until combined
  • Pour into a baking dish, top with chocolate chips, and place in the oven
  • Bake for about 45 minutes or until a toothpick is inserted and comes out clean
  • Enjoy!
